Yikes! Hi Dave Zeltser! Have you tried asking Product Support? They have some cool tools and functionality from the background/server side that they might be able to help with. If updating the default in the Email Settings area didn't work, I can't think of any other options other than contacting Support. I've been poking around trying to see if there's somewhere to update en masse, and I can't find anything Support can often manipulate that stuff from the background though. Good luck!!
